Now in its third year, the Bombay Sapphire pop-up has been re-imagined with creative cues taken from the bustling markets and trade route of the original Silk Road.
Market stalls will be influenced by the mouth-watering flavours of Spain, Italy, Germany, China and Morocco, countries where Bombay Sapphire sources some of its 10 botanicals that are then infused to make its premium gin.
Running for five nights from 1 – 5 November at Fresh Factory in Eden Terrace, Auckland, the event will feature five food and cocktail stalls curated by Bombay Sapphire spirits ambassador, Chase Bickerton, and Jamie Johnston, the man behind pop-up sensation, Judge Bao.
Cocktails include the Moroccan-influenced Sunset Sapphire Tea with dry ice, matched with harissa-roasted chicken wrapped in thin filo pastry and served with a preserved lemon and pistachio labne.
“There’s also a fun tiki-sling, a spin on the traditional g&t and spritz that includes a carrot rose I’ve created,” says Chase.
Chase has a passion for gin and is keen to show guests just how versatile a spirit it is.
“Each market stall will take its cues from a particular country and its cuisine. I’ve then gone one step further to match each drink with a particular occasion.
“For instance, for the beer drinkers and matched to Jamie’s German bratwurst, pretzel and sauerkraut burger, I’ve created a drink called the Angelic Bier. It’s a creation using Bombay Sapphire, passionfruit shrub and angelica honey that’s then topped with beer and an orange blossom and hop spray that helps activate the senses and the flavour,” he says.
Each session will see approximately 200 guests gather to create the atmosphere of a bustling bazaar and be taken on a sensory journey with music provided by top Auckland DJs.
